Straight from the family recipe box, this sweet potato casserole is a sideboard stunner at Thanksgiving. Don't tell but sometimes we even skip dessert and go back for seconds of the casserole instead!
3 cups cooked sweet potatoes, mashed
2 eggs, beaten
1/2 cup milk
1 teaspoon vanilla
1 cup sugar
1/2 teaspoon salt
1/3 stick butter, melted
Topping
1/3 stick butter
1 cup brown sugar
1/3 cup flour
1 cup chopped pecans
Mix together all ingredients, except topping, and beat until fluffy and all potato strings removed. Pour into greased baking dish.
Melt butter. Add brown sugar, flour, and pecans. Crumble over sweet potatoes. Bake at 350 degrees for 35 minutes or until good and bubbly.
This freezes well just be sure to let it thaw overnight in the refrigerator.
