After a long week in the orchards, there is nothing finer than sitting for a spell in the living room of The Paxton 1884 over cocktails and one of their famous cheese plates. Right in the heart of Thomasville, the historic Inn is owned by our dear friends Carol and Charlie Whitney and Carol is one of the finest cooks in town. (You'll often find me begging a seat at the breakfast table with the inn's guests.)
Carol weaves our pecans into so many of her delicious recipes but one of my favorite ways she uses them is in her Paxton Plate. She combines our pecans with the delicious cheeses of local artisan Sweet Grass Diary and with the delicious jams of another local company Blackberry Patch.
