Whether we're relaxing in the shade of the pecan trees or scalloping by the sea, this time of year just beckons for a good picnic. I always make sure to have a little something sweet on hand. A family favorite is our Chocolate Pecan Pie Cookies. Don't be afraid to take the shortcut of buying prepared pie dough. When it's hot outside, it's good to minimize time in the kitchen and maximize porch sitting!

Chocolate Pecan Pie Cookies
1 prepared pie crust
2 tbsp butter, melted
½ cup pecans, chopped
1/3 cup brown sugar
¼ cup dark corn syrup
2 eggs
1/8 tsp salt
¼ cup semi sweet chocolate chips
Preheat oven to 400 degrees and assemble all of your ingredients.
In a large nonstick pan cook butter, brown sugar, corn syrup, salt, eggs and chocolate chips until slightly thickened. Remove from heat and set aside.
Unroll dough and cut out circles using a 4 inch round cookie cutter.
Gently fold up the edges and spoon about 1 tbsp of pecan mixture onto the pie shell. Bake on parchment lined pan for about 7 minutes or until filling is set.
Remove from oven, allow to cool and enjoy!
