These gluten- and grain-free blondies are a deliciously rich and nutty treat, perfect for satisfying your sweet tooth while keeping things wholesome. Made with nutrient-packed pecans and a touch of dark chocolate, they boast a naturally sweet and buttery flavor that feels indulgent without being overly sugary.
2 1/4 cups pecans, divided
1/3 cup packed dark brown sugar
1/4 cup almond flour
1 teaspoon vanilla extract
2 large eggs
1/2 teaspoon baking powder
1/4 cup roughly chopped dark chocolate
Sea salt, for sprinkling on top
Preheat oven to 300˚F. Spread pecans on a baking sheet and toast in the preheated oven until fragrant, about 10 minutes. Let cool. Chop ¼ cup of pecans and reserve. Transfer remaining 2 cups pecans to a food processor and process until smooth and creamy, about 2-3 minutes, stopping to scrape down the sides as needed.
Increase oven temperature to 350˚F. Line a 8x8 inch baking pan with parchment paper and spray with nonstick cooking spray.
Transfer pecan butter to a mixing bowl (you should have about 1 cup). Whisk in brown sugar, almond flour, vanilla, eggs, and baking powder. Fold in reserved chopped pecans and dark chocolate.
Pour batter into the prepared pan and spread evenly. Sprinkle sea salt generously over the top. Bake for about 18-20 minutes, or until a cake tester comes out clean. Allow bars to cool before cutting into squares.
