Overnight Oats with Ground Pecans and Blueberries

Makes about 3 cups

Remember our delicious baked Breakfast Bars? Now you can enjoy all of those delicious, nutritious flavors in the form of overnight oats. Ground pecans add richness and heart-healthy fats, while Greek yogurt delivers a protein boost to keep you satisfied all morning. Flax seeds contribute omega-3s, and fiber-rich oats help maintain steady energy levels. With bursts of antioxidant-packed blueberries and a subtle coconut flavor, this make-ahead breakfast is the perfect way to fuel your day—just mix it up the night before and wake up to a ready-made nutritious meal.

1 cup pecans

1 1/2 cups milk or almond milk

1/2 cup plain Greek yogurt

2 tablespoons honey

1 cup rolled oats

2 tablespoon ground flax seeds (flax meal)

1/2 teaspoon ground cinnamon

1/4 cup unsweetened shredded coconut

1/4 cup dried blueberries

Pinch salt

Fresh berries, to garnish

Toasted pecans and/or coconut, to garnish

  1. Place the pecans in a food processor and pulse until finely chopped but not creamy. The pieces should be slightly clumpy and about half the size of the rolled oats—stop before the nuts turn into a paste.
  2. Transfer the ground pecans to a medium bowl. Add the milk, Greek yogurt, honey, rolled oats, ground flaxseed, cinnamon, shredded coconut, dried blueberries, and a pinch of salt.
  3. Stir well until all ingredients are evenly combined and the oats are fully moistened.
  4. Cover and refrigerate overnight, or for at least 6 hours, to allow the oats to absorb the liquid and the flavors to meld.
  5. Stir before serving, adding a splash of milk if needed to loosen the texture. Garnish with fresh berries and toasted pecans and coconut.
