Pecans offer many nutritional benefits, including heart-healthy fats, antioxidants, fiber, vitamins and minerals (particularly manganese, zinc, vitamin B1, and magnesium). Combine this with a clean protein powder and a few sweeteners and you have a delicious, nutrient dense bar without any ultra-processed or artificial ingredients. These are perfect for snacking on the go or a sweet, healthy treat for hungry kids.

2 cups pecan pieces
4 ounces pitted dates (about 3/4 cup)
3 tablespoons honey
1 tablespoon coconut oil
3/4 cup old-fashioned rolled oats
1/2 cup coconut flavored protein powder
1/2 teaspoon vanilla extract
1/2 teaspoon sea salt
1/4 cup unsweetened shredded coconut
1/3 cup mini chocolate chips, or finely chopped semisweet chocolate
Chocolate Drizzle (optional)

1 tablespoon coconut oil
Preheat the oven to 300˚F. Spread pecans on a baking sheet and toast in the preheated oven until fragrant, about 8-10 minutes. Remove and let cool to room temperature.
Add the cooled pecans to the bowl of a food processor fitted with a metal blade. Process until smooth and creamy, about 2 minutes (stop and scrape down the sides once or twice as needed). Add dates, honey, and coconut oil and process until it all comes together like a thick paste, about 30 seconds. Add oats, protein powder, vanilla, and salt, and process again until it comes together in a clumpy dough that will hold when pressed between your fingers, about 30-60 seconds longer.
Turn the mixture out into a bowl and stir in shredded coconut and chocolate. Line a loaf pan with one long piece of parchment that hangs a few inches over two sides of the pan, for easy removal. Transfer mixture to the prepared pan and press firmly with your fingers or the bottom of a measuring cup until densely, evenly packed. Refrigerate for at least 1 hour.
To make the chocolate drizzle, combine chocolate and coconut oil in a microwave-safe bowl. Microwave in 15 second increments until just melted and smooth. Slice the chilled bars and drizzle the warm chocolate over the top. The chocolate will solidify as it cools.
